A Curry Chicken Recipe That I Like

Ingredients (4 people):
- 400g of Rice
- 1 Tbsp of Butter
- 600g of Chicken as small Pieces
- One Large Diced Onion
- 4 Diced Cloves of Garlic
- 200g of Cream Cheese
- Curry Powder
- Chili Powder / Chili Flakes
- 3 Diced Tomatoes
- 3 Diced Paprika (Bell Peppers)
- 250ml of Coconut Milk
- Pepper, Salt and Cumin
Step by Step
- Cook your rice.
- Heat the pan on medium-to-high heat and add the butter and let it melt.
- Add the chicken, together with some salt, pepper and cumin with it. Make sure to mix it all up a bit. cook for around 3 minutes.
- Add the diced onion and cook for another 3 minutes.
- Add the diced garlic and cook for 1 minute.
- Reduce the heat to medium-low and add the cream cheese, making sure it spreads evenly over all of the chicken.
- Add curry, to taste of course, and mix.
- Add the chili powder or flakes to taste and mix.
- Add the chopped bell peppers and tomatoes, and let the mass cook (with the lid on) for 2-3 minutes.
- Add the 250ml of coconut milk and stir.
- Add salt and pepper, as well as other spices of your choosing to taste.
- Serve warm on rice.
